how to modify the "Stats History" time period

Right now the 'Stats History' windows display ten minutes worth of data.

Is there a simple way to change this length of time? perhaps an option in Webmin - Webmin Configuration that can be changed via the user interface?

If so, then "How?" and

If not, then can you point me toward the webmin source file that sets and uses that value.

Yes, have a look at Webmin Configuration > Webmin Themes page and Real-time monitoring options accordion.
