Hello, Dovecot now offers repos, eg. for CentOS 6 & 7
Create /etc/yum.repos.d/dovecot.repo
[dovecot-2.3-latest]
name=RHEL $releasever - $basearch
baseurl=http://repo.dovecot.org/ce-2.3-latest/centos/$releasever/RPMS/$basearch
gpgkey=https://repo.dovecot.org/DOVECOT-REPO-GPG

so, is it now safe to update?

You should know that Centos comes with his version of used software, e.g. they tend to keep the same version but update to patch all know bugs or necessary updates. So when you ask if is safe to use 3rd party repo the answer is "dont do it" (if you dont know what are you doing). The chance you will break many things is too high to risk, especially for zero gains.
