I have managed to totally mess up my postfix system by attempted to install sendmail.
If I delete the postfix module, can I reinstall it again without causing any more damage?
cannot you just re-upload your configs there and restart postfix? I mean do you have a backup?

Sure, you can reinstall Postfix. However, if you don't have backups, you may want to check and see if you have the configs still in /etc/postfix.
If those are there, I would make a backup of them before doing anything else.
If you don't have any Postfix configs, it'll take some tweaking to get things working, though it's certainly possible.
