Updated recently and now having many complaints from users about sending mail, delays, rejects, etc. Tried to view the maillog, but it does not display anything in the log window. The spinner just keeps spinning and the log page does not load.
Any suggestions?

Hmm, you may want to try logging in as root over SSH and viewing the mail log that way for the time being. When doing that, do you see any error, warnings, or problems?
The mail log on CentOS 5 is located in /var/log/maillog.
