Any examples/documentation on setting up filters in Mail?

Any examples/documentation on setting up filters in Mail?

Specifically I want to filter emails that DO NOT CONTAIN my email address. I have a folder called "Other" that I send all email to (in GMail) that us not to me directly. Trying to replicate my Gmail filters in Usermin and so looking for some documentation on it because it is not obvious in Usermin itself.
