There unfortunately isn't a great way of doing that.
One way that might work is to go into Server Configuration -> Move Virtual Server, move that domain to be a Sub-Server -- and then once you do that, go back into Server Configuration -> Move Virtual Server again, and it'll allow you to set it to be a top-level server, where you can choose the username to use.
That should do what you're after, but it's a round-about way of doing it :-)

might be better just to delete the virtual-server and recreate it....? (after backing up, of course)
