First off, I have to say that I am very grateful that you've released the install.sh script for the GPL version of Virtualmin. So thank you! I imagine this has cut down on support requests significantly :-)
Secondly though, since the release of the script for GPL and the option to upgrade directly from within Virtualmin, I was wondering if the downgrade process has changed from what is outlined in http://www.virtualmin.com/documentation/installation/uninstalling.
I'm willing to try out the Pro edition but just not convinced it is worth me paying an annual fee for what I will actually use.

Yeah, we're pretty happy about offering an install.sh for both the GPL and the Pro version :-)

Yup, the steps outlines in that document should still be up to date.
The two biggest reasons people use Virtualmin Pro are the Install Scripts (80 some web apps that can be installed with a click of a button), as well as the reseller capabilities.

But yeah, if you try it out and decide it's not for you -- no problem, just request a refund, and run through those downgrade instructions, and you should be good to go!
