Are these 2 dependent on each other? Our host informed us that we cannot use sendmail without postfix being active.
We use google apps for email so we dont really need any mail support except for the default sendmail as our website would use the sendmail for user notification emails.
Also, is it safe to disable the dovecot service?

You have to pick one or the other -- Postfix or Sendmail. They can't both run on the same system.
A default install of Virtualmin would install and configure Postfix... I'd recommend sticking with it over Sendmail.
Now, there is a binary named "sendmail" that Postfix uses for, well, sending mail. It's possible that is what your app uses.
Also, is it safe to disable the dovecot service?
If you don't need POP or IMAP, it would be safe to disable Dovecot.
