I have looked thru the virtualmin menus for hours trying to find a place where I can configure Postfix and have given up. It just doesn't exist.
Is there some kind of plugin I need to install to do the postfix configuration or does it all have to be done thru the command line manually editing the config files?
When I go into virtualmin configuration I see configuration for qmail+ldap, but I am using Postfix. Why does it have configuration for a server I am not even using yet no configuration for postfix?

Well, what specifically are you looking to change?
It sounds like the screen you're referring to is the "Qmail + LDAP Options" screen in System Settings -> Virtualmin Configuration... and that only exists because folks using Qmail and LDAP require some additional settings that other users don't require.
You can tweak some email settings (for Postfix and other MTA's) by going into System Settings -> Server Templates -> Default -> Mail for Domain.
You can tweak a number of Postfix specific settings by going into Webmin -> Servers -> Postfix Mail Server.
If there's anything in particular that you'd like to change that you can't alter from those screens, let us know and we'll try to point you in the right direction :-)
