Howdy -- thanks for contacting us!
It does not switch to GPL, it continues to be a Pro installation.
What'll happen is that it will no longer receive any updates, and there will be a notice just for the admin stating that it's expired. But it will continue to function.
Note that the system will attempt to renew your license at the end of the month; if that's not what you want, let us know so I can go ahead and cancel your license.
