I wouldn't try adding sites and then removing Virtualmin, that's likely to cause problems.
You probably need to decide whether you want to use Virtualmin, without your providers help -- or if you want to use just Webmin, and have your providers help.
Most server or VPS providers don't provide support for control panels, so what they're saying isn't unusual... it's actually fairly rare that they'd offer support for even Webmin. You're always welcome to ask in the Forums here for assistance with Webmin or Virtualmin.
