Hello, the server has been configured with dkim, spf, dmarc. However my emails reach the spam tray in Gmail and hotmail. My ip is not in blacklist, also has passed tests in mail-tester.com with a score 10/10 also in mxtoolbox.com there are no problems.
I need to solve this problem.

Just to verify, is 91.121.184.47 your server's IP address?
That appears to be the IP that outlook.com is receiving the email from.
The SPF and related records look good.
But one thing you may wish to do is setup reverse DNS for that IP.
It looks like the reverse DNS for that IP currently resolves to "ns342838.ip-91-121-184.eu" -- I'd suggest changing that to your server's hostname.

Our original ip has been changed (Order of my boss), but the reverse dns resolves correctly - In mxtoolbox PTR 91.121.184.46 France server.serverredamp.com 24 hrs
My serious query, the reverse dns should return all domains under that ip?

I personally would not add all domains to the reverse DNS -- I generally prefer to add just one, usually the hostname of the server.
After doing that, if you're still seeing email go to spam, could you paste in the headers from a new email, containing your new IP address?

The sent messages do not have any format only some plain text lines, and only the mail is sent to a single user.

Yup the reverse DNS looks good now.
And the SPF and DKIM records look good as well, according to the headers they all checked out.
Are you saying that after changing IP addresses, you're still experiencing an issue with the emails going to spam?

Is correct, my emails are still coming to the yahoo, hotmail and gmail spam tray. Ask for support on the hotmail page, after days they replied that there is no problem with my ip. .... =(

I reviewed your IP address on MXToolBox, and I'm not seeing any issues showing up on the RBL lookup there:

However, there may be internal lists that they use. It's possible that there are issues with your particular ISP that are causing things to be flagged.
Unfortunately, I don't believe there's anything in addition that you could setup to resolve that. You're using all the right tools with the right setup, it appears.
The only two options I can think of from here would be to either work out with the ISP's to get delisted from their own internal lists, or to look into trying a different ISP to see if that resolves the problem.
You could even try just getting a low-end server at another ISP just to relay email through, that might be enough to get things working.

I understand, is it possible for these large mail servers to block per domain or always by ip?

It's usually by IP, though they could do it by domain if they chose to.
For example, some RBL's are built to look not for IP addresses, but for the domains used in spam emails that go out.
It's a lot more difficult to end up on that kind of list, but it's certainly possible.
You could test that theory, by setting up multiple domains on your server, and trying to send from each, and then see if any of the emails go through.
