How to get dovecot and postfix to look for an ssl cert unique to each virtual domain?

no. There is no way to have ssl for each domain dovecot and postfix separately.

Actually there is in dovecot. It supports SNI but postfix does not. It requires one cert for all your domains also known as a SAN cert. I am attempting to work with let's encrypt to do that. They say it can be done but we have yet to make it work well.

I spent 3 days try to make it working in Virtual in with no success. Can any one made it working?
