For some reason I seem to be getting lots of email/log files being generated everyday which get stored in the /root/Maildir/new/ folder - this eventually takes up a lot of space on the server and can grind it to a halt if you dont remember to delete these files every so often.
I tried to attach a couple of examples of the files generated in txt format, but attachments are not working for me at the moment - anyway, they're mostly warnings about resource usage or suspicious activity: here's one extract from the files as an example:

Anyone know how to stop these from being auto generated so they dont clog up my server?

My suggestion would be to setup an email alias for root, that sends all email destined for root to another address.
You can set that up by editing /etc/aliases, and setting the "root" line to point to your preferred email address. Then, save that file, then run the command "newaliases".

You may try to reconsider your cron job scheduling (system->scheduled cron jobs), some of them may run too often.
