Hi,
Is there an easy way to setup "Store and Forward" mail server for a domain we DO not host?
That is, our customer has their own primary mail server hosted elsewhere, and would like us to simply provide them an offsite backup mail server in the event their primary goes down for maintenance or otherwise.

Well, the only documentation we have written up are for when you control both servers... that documentation is here:

It's certainly possible to manually configure a backup mail server when you don't control the primary.
If I recall, it's just a matter of adding the domain into the "relay_domains" field in the Postfix main.cf on the backup server.
And of course, you'd also want to setup the secondary server with a MX record.
