I'm wondering why Ubuntu LTS on X86_64 is excluded from "Grade A" OS Support (http://www.virtualmin.com/os-support) ?
If I'm running an x86_64 VPS should I stick w/ CentOS?

Ubuntu's 64bit support is called "amd64" (the same is true with Debian).
That's actually the name of the architecture on the chip... it doesn't imply it's AMD only, that architecture is supported by both Intel and AMD.

Running Ubuntu's 64bit "amd64" will work perfectly on your 64bit VPS.
