In most cases, if you aren't sure how to install it, we would tend to recommend the default Postfix and Dovecot, which are installed and configured for you when using the install.sh installer.
You don't have to do any work to configure Postfix and Dovecot -- they come all setup and working for you.
I'm unfortunately not really familiar with how to install or configure Qmail. If that's something you really really want (which I don't recommend), you'd probably need to search the Net for instructions on getting Qmail to work with your particular distribution.
You'd probably want to use a Qmail package for your distribution (like an RPM or DEB), rather than compiling from scratch.
Aside from that, I really don't know how to set it up -- and I again suggest considering Postfix and Dovecot :-)

It's the same as configuring qmail when you aren't planning to use Virtualmin and Webmin. ;-)
That said, are you really sure you want to do that? It's not the best choice when building a new mail server.
