Just wondering - did using rsync/scp work out for you making a hot spare? If so - what directories did you keep/exclude in the etc? Are you using the hot spare in the context of load balancing? Just interested in how this is working out for you and if this is in fact the route you took to create a "hot spare."
You can use scp to move the directory holding all user mail files or rsync it. For mysql, you can use webmin's mysql module to export the database.
