Howdy -- Virtualmin's support for Exim is experimental, doesn't support all the mail features, and is otherwise not recommended :-)
If you really want to try out Exim support, you can switch Virtualmin to use that by going into System Settings -> Virtualmin Configuration, and change the "Mail server to configure" to "Exim".
Again though, not everything will work, and we really don't recommend it :-)

I second that - the Exim support is incomplete, and was added by a single customer for their own use. We strongly recommend you use Postfix or Sendmail instead.
