I have to move 100+ domains from a server that used sendmail to a new server that uses postfix.
Will VM convert the mbox to maildir automatically ?

Theoretically, yes. Try it with one domain and let us know if there are any problems. ;-)

Owner decided he didn't want to take that chance with 100+ domains to move.

Mailbox conversion should work - however, it is pretty complex, as there are so many different ways mail can be setup (/var/mail, ~/mbox, etc..) that I may not have covered every single case. So I would recommend trying one domain first if possible..

"Chance"? I don't understand? You're bringing up a new server, right? It's not in service yet, right? So, what possible danger could doing a test restore of a domain onto a non-production server represent? Testing is exactly what you do when you need a predictable migration.
