I am wondering, whether i can exclude a package from being updated. Example: i have had installed postgresql, but need to keep that version, so my 9.1 is not being updated, as long as the application itself is not able to work with 9.3. So i'd like to exclude postgresql from being updated for some time.

Hmm, I didn't actually think Ubuntu 14.04 provided postgresql 9.1.
However, it's possible to configure your system to not update a given package -- just make sure you're aware of the potential security issues there though, as not updating packages can lead to security problems.
