The last post that I found about Sieve was 2013. Is there any update on whether there is support for this in CentOS 7?

Howdy -- what is it that you're looking for exactly?
Dovecot does support Sieve, though Virtualmin/Usermin doesn't configure it. However, you can certainly configure it manually or via other means. For example, I think RoundCube has plugins for managing Sieve scripts.
