What kernel should be set to boot the system?
title CentOS (2.6.32-279.11.1.el6.x86_64) This is the current. Correct?
title CentOS (3.6.3-1.el6xen.x86_64) This I see this second
title CentOS (2.6.32-220.el6.x86_64) And this third.
This is correct??

What type of VPS do you plan on using? KVM? Xen? Or something else?

You may need to boot that second kernel, as I don't believe CentOS 6 includes Xen support in their default kernel.
