A follow up question. I've been asked if we can keep our older server online as a training server. I understand I would have to buy a new licenses, but I'd like to know if I can change the license file when we're ready to make the switch. Thanks.

Sure, you can change the license and serial numbers using the Virtualmin command line tools:
