I'm trying to make ProFTPd just go away in our status and such on the new www server, since we don't use FTP for anything. But, whenever I try to disable "Default?" in Features and Plugins, it won't stick, and ProFTPd is still showing up in the Status section.

That's because domain owners can still potentially be using it. If you really want ProFTPd to disappear completely from the system information page, you'd need to un-install the package..
What about "Default?" not respecting user input? That really looks bug-like, to me, even if we accept that Virtualmin should always show status of ProFTPd even if nothing is using FTP.
The status behavior seems bug-like, to me. FTP is an optional service; Virtualmin ought to be treating it that way, and there ought to be a way to disable it in the Status section. I don't really like the idea of a package being installed driving the behavior of Virtualmin, when the user is attempting to opt out of using it.
I'm really feeling like an FTP-less system should be possible, and shouldn't require jumping through hoops.

The "default" checkbox only controls if the feature is enabled or not by default for new domains - if you un-check the box in the first column, the "default" becomes irrelevant. I will fix the UI to make that clearer ..
As for whether the FTP status should appear at all, I looked over some previous bug reports about this and I've changed my mind .. it is confusing for users to see it when they have disabled FTP. I will change the behavior in the next Virtualmin release to not show ProFTPd status unless it is enabled on the Features and Plugins page.
