When I create a new virtual server in Virtualmin, the "Default website for IP address?" option under Website Options for that new server cannot be changed. The value is set to "Yes".
I also notice that when I try to browse to the domain name (efrenchlearning.com) that it takes me to another virtual server's website.
What is wrong here?

Was this new domain on it's own private IP, or on the shared IP?
Also, can you change this setting for any other domains?

I am really not sure how to answer the first question. I think they should all be sharing the same single IP address I have setup for the host, none of the virtual machines have their own unique IP. Yes, I can change the setting for two out of 4 of the domains now that you mention it. I also noticed that the other domain that I am having the same problem, where I cannot modify the "Default website for IP address?" option under Website Options, happens to be the same website that I am taken to when I try to browse to the efrenchlearning.com website from the internet.
If this helps any, Virtualmin is installed on one of my Linux servers and has an internal physical network IP. I have this server behind a firewall where it is setup with rules for outbound inbound traffic bound to the external IP - a standard "behind the firewall" setup.
Basically, I create the new virtual servers the same way each time, but I did notice something curious...
I have 4 virtual servers set up in virtualmin. When I go to "Edit Virtual Server" on 3 of them (the ones that are not giving me a problem), under IP Address and Interface, the line that reads "External IP Address" has the second bubble filled in with the external IP address manually input there. However, the first bubble that reads "Same as real address" has the INTERNAL LAN IP address listed in the parenthesis. The eFrenchlearning site I referenced earlier (the one I am having problems with) also has the second bubble chosen like the others with the external IP listed, however, the first bubble's parenthesis have the EXTERNAL IP listed in it instead of the internal like the others.
I am sure these two problem domains are connected but I am not sure the reason, or how to correct it.

Update
Based on previous notes, I decided to Change the IP of the oddball domain to the internal IP address and sure enough, everything started working normally.
I will keep this in mind for future reference to check on if I experience the same issue.

Ok, that would explain it .. the default site won't work properly unless the internal and external IPs are set correctly.
