For some reason, using nginx as the webserver using the new module, websites can't stay online, it seems php-fcgi crashes.

There was some work that Jamie was doing to resolve that issue, some other folks had seen similar issues. I'll talk to Jamie about that and see if there's a workaround for that yet.

Alright well if he doesn't know about it already, there's this awesome thing called php-fpm, which is basically a process manager for fastcgi which monitors, starts, stops and manages fastcgi processes.

Okay, the next plugin version, 1.2, will contain a workaround for the issue you're seeing. It should be out within the next few days.
Using PHP-FPM was one of the things some other folks had suggested as well, and he's looking into it, although that won't be part of what version 1.2 has.
