Disabling FTP in ProFTPD (when SFTP is currently working)
Where would I find the configuration to disable standard FTP & FTPS?

Howdy -- you can disable any service you don't need running by going into Webmin -> System Bootup and Shutdown, and there you can both stop the server, as well as configure it to not start up next time the server boots.
